𝗛𝗲𝗮𝗹𝘁𝗵𝘆 𝗔𝗙 𝗣𝘂𝗺𝗽𝗸𝗶𝗻 𝗣𝗶𝗲 🥧
So healthy it doesn’t have to be Thanksgiving to eat it. (And it also makes a great breakfast 😋)
My dad has a sweet tooth and I made this for my him when he was recovering from surgery. He didn’t even notice it’s:
𝗚𝗹𝘂𝘁𝗲𝗻-𝗳𝗿𝗲𝗲, 𝗦𝘂𝗴𝗮𝗿-𝗳𝗿𝗲𝗲, 𝗗𝗮𝗶𝗿𝘆-𝗳𝗿𝗲𝗲, 𝗘𝗴𝗴-𝗳𝗿𝗲𝗲, 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁-𝗳𝗿𝗲𝗲! (jk on that last one, just seeing if you were paying attention 😉)
Instead, this recipe is:
𝘗𝘶𝘮𝘱𝘬𝘪𝘯-𝘧𝘶𝘭𝘭, 𝘧𝘭𝘢𝘷𝘰𝘶𝘳𝘧𝘶𝘭, 𝘫𝘰𝘺𝘧𝘶𝘭.
Ingredients & Directions for each:
🔸½ cup coconut flour
🔸½ cup almond flour
🔸¼ tsp sea salt
🔸1 dash of stevia (optional)
🔸3 flax eggs (or 2 large eggs) (3 tbsp flax seeds mixed with 6 tbsp water, let sit for 5-10 min until gelatinous)
🔸¼ cup coconut oil, slightly melted
1. Mix altogether, getting rid of any lumps.
2. In an 8 or 9 inch pie plate, press the dough evenly around the bottom & sides.
🔸1 + ½ cans of pumpkin puree (unsweetened)
🔸¼ cup maple syrup
🔸⅓ cup unsweetened plain almond milk
🔸3 tbsp arrowroot powder (or sorghum flour, or cornstarch)
🔸2 flax eggs (2 tbsp ground flax, mixed with 4 tbsp water, let sit for 5-10 min until gelatinous)
🔸2 tsp pumpkin pie spice (cinnamon, ginger, nutmeg, clove)
🔸¼ tsp sea salt
1. Preheat the oven to 350 degrees.
2. Mix all the filling ingredients in a bowl. Pour the filling into the pie crust.
3. Bake for 60 - 70 min.
4. Let cool before eating

What is a Tiger Nut?
Contrary to the name, a tiger nut is tiger-free (phew!) and also nut-free (weird! But true!)
It is a root vegetable, a small tuber that tastes sweet and is packed with nutrients & fiber. 👊🏽
In one bowl, mix the following ingredients:
· 2 cups tigernut flour
· 1 cup almond flour (or you could just use 3 cups tigernut flour to make it nut free)
· 6 tbsp ground flax
· 2 tsp cinnamon
· 1/2 tsp salt
In a separate bowl, mix together:
· 2/3 mashed banana
· 1 cup blueberries
· 1 cup water
· 2/3 cup nut or seed butter of choice. I used a blend of coconut butter, almond butter & tahini - leftovers of what we had around. (You could use sunflower butter as per nut-free original recipe)
Mix the dry & wet ingredients together.
Divide into muffin tins or silicone muffin cups.
Makes approx 16 muffins.
I baked these for 32 min.

𝗦𝘄𝗲𝗲𝘁 𝗣𝗼𝘁𝗮𝘁𝗼 𝗖𝗵𝗼𝗰𝗼𝗹𝗮𝘁𝗲 𝗖𝗮𝗸𝗲 𝗼𝗳 𝗗𝗲𝗹𝗶𝗰𝗶𝗼𝘂𝘀𝗻𝗲𝘀𝘀!
Here’s a recipe to sweeten your long weekend - 𝘳𝘦𝘧𝘪𝘯𝘦𝘥 𝘴𝘶𝘨𝘢𝘳 𝘧𝘳𝘦𝘦, 𝘨𝘭𝘶𝘵𝘦𝘯 𝘧𝘳𝘦𝘦, 𝘨𝘶𝘪𝘭𝘵 𝘧𝘳𝘦𝘦!
🥮 2 medium sweet potatoes, grated
🥮 4 flax eggs*
🥮 ¼ cup honey
🥮 ¼ cup maple syrup
🥮 1 tbsp vanilla extract
🥮 ½ cup coconut oil, melted
🥮 1 cup cocoa powder (unsweetened)
🥮 2-3 tbsp coconut flour
🥮 1 tablespoon baking powder
🥮 1 tsp baking soda
*4 tbsp ground flax seeds + approx 10 tbsp water. Mix and let sit until gelatinous, approx 5-10min
*or you could sub 3 medium-sized 🥚
1. Preheat oven to 365 degrees F.
2. Combine the sweet potato, flax egg/egg, vanilla, honey, maple syrup & coconut oil in a large bowl.
3. In a smaller bowl, combine the baking powder, baking soda, cocoa powder, and coconut four and stir.
4. Stir this into the wet mixture until combined.
5. Line an 8x8 cake pan with parchment paper or liberally coat pan with coconut oil. Spread the batter in the pan, and bake for 35-45min.
6. Brownies are done when a toothpick inserted in the centre comes out clean.
7. Allow the cake to cool before icing (refrigerate if short on time).
· 3 tbsp Almond Milk (unsweetened)
· 2 tbsp maple syrup
· 3 tbsp coconut oil
· ¼ cup cocoa powder (unsweetened)
· 2.5 tbsp coconut butter
1. Once cake is cooled… Add all the frosting ingredients into a medium bowl and mix over a double boiler until smooth (or in a small pot on very low heat). You can add extra almond milk or maple syrup if needed for consistency.
2. Spread on top - cool in fridge to solidify if desired.
3. Throw on some summer berries 🍓- and 𝙚𝙣𝙟𝙤𝙮𝙮𝙮𝙮!

“𝗟𝗮𝘁𝗲 𝗦𝘂𝗺𝗺𝗲𝗿”. It’s a 𝘴𝘦𝘢𝘴𝘰𝘯 in Chinese Medicine commonly associated with the last 2 weeks of summer, but few people know that it was traditionally applied to the last 2 weeks of each season. It’s about 𝘥𝘪𝘨𝘦𝘴𝘵𝘪𝘰𝘯, about 𝙥𝙧𝙤𝙘𝙚𝙨𝙨𝙞𝙣𝙜 𝙤𝙪𝙧 𝙚𝙭𝙥𝙚𝙧𝙞𝙚𝙣𝙘𝙚𝙨 before the next transition or phase. It benefits us to eat well, supporting our digestive organs - the ‘Spleen’ (pancreas) & Stomach.
Many are preparing for back to school in Sept, so I thought I’d share a recipe that’s great to have on hand if you need a quick breakfast or snack that the whole fam will enjoy - and is super healthy, too!
𝗠𝗼𝗿𝗻𝗶𝗻𝗴 𝗚𝗹𝗼𝗿𝘆 𝗠𝘂𝗳𝗳𝗶𝗻𝘀
🔸1/3 cup unsweetened cranberries
🔸1/3 cup pumpkin seeds (or sub: sunflower seeds, sesame seeds or coconut flakes - or some of each!)
🔸1 ¼ cup grated zucchini
🔸2 cups grated carrot
🔸4 tsp. grated ginger
🔸1 cup unsweetened shredded coconut
🔸¼ cup maple syrup or honey
🔸¼ cup unsweetened apple sauce
🔸3 eggs or sub 3 flax “eggs”
🔸2 tsp. vanilla extract
🔸½ cup coconut oil melted
🔸¼ cup unsweetened plain nut milk (eg almond or coconut)
🔸1 ½ cups almond flour
🔸½ cup g/f flour (I like oat flour, or chickpea flour for extra protein)
🔸2 tsp. Cinnamon
🔸1 tsp. baking powder
🔸¼ tsp. baking soda
🔸½ tsp. salt
1. Preheat oven to 350 degrees.
2. Line muffin tin(s) with 15 paper liners (or use silicone muffin cups)
3. In a large bowl, combine flours, cinnamon, baking powder, baking soda, salt. Whisk to combine.
4. In a 2nd large bowl, combine zucchini, carrot, and ginger. Mix in the eggs, coconut oil, maple syrup, apple sauce, cranberries & seeds and vanilla. Mix just until combined.
5. Carefully mix 1/2 of dry ingredients into the wet. Then add nut milk and mix just until combined. Add remaining dry ingredients.
6. Divide the batter into the muffin cups.
7. Bake for 25-30 minutes or until knife inserted in the middle comes out clean. After removing from the oven, cool in muffin tin for 3-5 minutes. Then remove muffins from the tin and continue to cool on a cooling rack.

𝗛𝗮𝗽𝗽𝘆 𝗙𝗿𝗶𝗱𝗮𝘆! I want to share with you my 𝘴𝘶𝘮𝘮𝘦𝘳 𝘣𝘦𝘷𝘦𝘳𝘢𝘨𝘦 𝘰𝘣𝘴𝘦𝘴𝘴𝘪𝘰𝘯...
𝗛𝗶𝗯𝗶𝘀𝗰𝘂𝘀 & 𝗥𝗼𝘀𝗲𝗺𝗮𝗿𝘆 𝗙𝗶𝘇𝘇
Hibiscus is a cooling and refreshing tea, great for summer. (Note if you have low blood pressure, avoid or use hibiscus sparingly, as it can lower blood pressure.)
Rosemary is slightly warming, enough to keep it balanced and add a unique accent of flavour. It’s also great for circulation.
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴 & 𝘐𝘯𝘴𝘵𝘳𝘶𝘤𝘵𝘪𝘰𝘯𝘴:
🌺 Gather some loose-leaf dried hibiscus and rosemary. (@theherbalclinic is a good place to grab some!)
🌺 Brew an extra strong batch of hibiscus & rosemary tea, at a ratio of 2:1 (2 parts hibiscus: 1 part Rosemary). I like to make almost 1 litre to have extra on hand.
Let the tea cool for an hour, then put in a glass jar in the fridge to chill for a few hours. You can store it in the fridge for a week or so.
🌺 When ready to drink, fill a mason jar with 1/3 tea mix and 2/3 soda water.
🍋 I like to add a squeeze of lemon juice to make it extra tart & refreshing.
And yes, in case you noticed: while it may not be the 100% TCM thing to do, even *I* will put a few ice-cubes in my drink in +40 degree weather! (albeit with room temperature bubbly 😉)

One of the bright sides of the world unravelling has been that I’ve had more time at home to prepare meals for myself where I can spend extra time on the presentation - as I’ll be eating it at home, too! I often pack / carry both lunches & dinners with me on my work days. So this has brought some joy.
Having said this, I want to also recognize there are many people who are unable to provide afford food for themselves/their family at this time, and encourage if you have a few bucks to support one of our location food banks (I recently made a donation to @feedontario but there are others like The Stop or Daily Bread).

In Chinese medicine, spring brings the Liver System into focus. It governs growth and renewal. It’s the time to cleanse, to support the liver detoxification pathways. Time for nature to shedding the winter ‘sludge’ and emerge with a surge - like a sprout pushing its way up & out of the soil 🌱
